Delicious Gluten free and Vegan Carrot Cake

This cake is amazing: that's all I can say. Yesterday, I don't know why, but I was craving carrot cake; so i threw ingredients together and it did NOT disappoint! You would never guess it was gluten free or vegan! Let's get into it so you can all experience this perfection:

Gluten Free, Vegan Carrot Cake
Prep time: 25 minutes
Cook time: 30 minutes
Ingredients
3 cups almond flour
1 1/4 tapioca starch (easily substitute with just over 1/2 cup corn starch)
1 cup coconut sugar
2 tsp baking soda
1/2 tsp salt
5 tsp ground cinnamon
1/2 tsp nutmeg
1 cup of grated carrot (about 1 medium carrot)
1/4 cup coconut oil, melted
1/4 cup water
2 tbs apple cider vinegar
2 tsp of vanilla extract (I substituted with 1tsp organic honey)
Directions
1. Preheat the oven to 350F.
2. In a large mixing bowl, combine the flour, starch, baking soda, salt, cinnamon, nutmeg and coconut sugar. Whisk until no clumps are left (I used a fork because I don't have a whisk! 🤣)
3. Take the medium sized carrot and grate it until you have 1 cup. Place the carrot shreds into a blender with a few tbs of water. Blend until creating a puree consistency.
4. Pour the carrot puree on top of the dry mixture, creating a top layer of carrot mush. Create three wells in the bowl; 1 filled with melted coconut oil, 1 with the apple cider vinegar and 1 with the vanilla (or honey like me).
5. Pour the 1/4 cup of water over top and mix everything in the bowl together.
6. Use the coconut oil to grease a cake pan (the one I used was 7x11 I think - honestly, just use what you have!); filled up about an inch thick. Place in the oven and bake for 30 minutes, or until golden brown on top and a knife or toothpick comes out clean. 7. Let cool and enjoy!
